Bonita is a relative new variety developed and released in 2010 by the Louisiana Agricultural Experiment Station to provide a specialty-type white-fleshed, tan-skinned cultivar similar to ‘O'Henry’ but with southern root-knot nematode and soil rot resistance, superior storage root shape, and a higher dry matter content.
Bonita is high yielding with light tan skin with a pink cast at harvest, the pink fades to tan in storage. The flesh is white with a tinge of yellow and twice as sweet as O'Henry. They are great for making sweet potato fries as
well as many other cooking uses.
